If I leave cucumber out it gets dry and moldy. If I put it in the fridge it gets soft and soggy. In either case I have to through it out before it gets used up.

Well of course it will always be best when fresh! The sooner you eat it after being picked the better it will be. But if I have to store them for any length of time I always put them in a zip top bag with wadded up paper toweling. The toweling wicks the moisture away from the cucumber!
