Its the sugar added to the chocolate that makes it sweet. Chocolate is naturally bitter. Most cooks and bakers use the dark chocolate (unsweetened) so they can control the sweetness when they prepare there dishes and desserts.

yes its true, in ancient times hot chocolate used to be spicy because in order to make it taste better they added hot peppers then change hot chocolate to make it sweet not spicy because just chocolate alone tastes bad
oh yeah, totally. Try any dark chocolate and you'll see that. I've had vegan chocolate which is very bitter, but for some strange reason I kind of like it....
