Salads are always good. Here's one I like to make:

torn lettuce (I prefer romaine)
tomato, chopped
cucumber, chopped
onion, diced
carrot, shredded
cheese, shredded (cheddar or mozarella)
tuna, 6oz can (albacore is best)
cottage cheese

When I have cottage cheese I use it instead of salad dressing, but you can omit the cottage cheese and just use your favorite dressing.
