Zucchini Flower substitute?
I live in a small community, but found a recipe that I really want to try from take home chef. It uses zucchini flowers and wraps it around cheese. However, the zucchini we have access to at the store does not have flowers still attached. Is there a substitution anyone can recommend?

its like seeking erzats onion or garlic... this flower is essential for this kind of plate... you can use other things, but you will miss the spirit ...
you can user spinach , chard ,or even lettuce , but never be the same, maybe you can get a tasty plate , but nothing compared with the real one...
btw... zucchini never has the flower attached to them , the same way you never can find flowers attached to apples and oranges or lemons.... they vanishes as the fruit developes
You can grow your own - zucchini are very hearty and rapid growers you just pick the flowers you need and let the rest grow to become Zucchini. You could also check around and see if any of your neighbors grow zucchini or if there is a farm in driving distance. Good Luck!

Pancakes with zucchini blossoms
150 g white flour
100 g of milk
75 g sugar
20 zucchini flowers fresh
1 / 2 lemon (rind)
1 egg yolk
1 tablespoon of olive oil (or oil seeds)
2 tablespoons of brandy (or brandy)
1 / 2 teaspoon yeast
1 pinch salt
Remove zucchini flowers to the central and open them, check inside there are insects or land; pass them with a thin cloth wet.
Put in a bowl beat the egg yolk and sugar with the scr??orza half of the grated lemon, a spoonful of olive oil and two tablespoons of brandy: having to obtain a smooth and homogeneous.
Joining the cold milk and flour mixed with yeast, by dropping it to rain from a setaccino; all work well with a tablespoon of wood ensuring that no form of lumps, then combine chopped zucchini flowers a pinch of salt and stir plan.
Put the pan on the fire with a lot of fried oil seeds fresh (ie not used for other firings), and when it is hot but not boiling put part of the compound spoons, leaving brown and cook the pancakes on both sides.
Putting the fritters on paper cooks, tenetele heat and continue to cook the other, until the exhaustion of the compound.
Arrange finally pancakes in a covered dish with cutters and serve immediately.
