Christmas Dip Recipe

Makes 2 servings
    2 avocados ripe small (about 1 1/2 lb.), peeled and cut up     
    1 tomato ripe medium, peeled and cut up                        
    1/2 cup mayonnaise or dairy sour cream                         
    1/2 onion small                                                
    2 green chilies to 4 chopped, drained                          
    2 tablespoons lemon juice fresh                                
    1 teaspoon salt                                                
    Assorted cut-up raw vegetables or corn chips                   

Place avocados, tomato, mayonnaise, onion, green chilies, lemon juice and salt in a blender container. Cover and blend until smooth. Pour into a bowl. Cover and chill at least 1 hour.

Serve with vegetables or chips. Garnish platter with tomatoes and parsley for a festive look if desired.
Note: If you don't have a blender, mash avocados, mince onion, and mix by hand.
