Pecan Recipes

Pecan waffles

1 1/2 cups flour
2     tsp. baking powder
2     eggs
2     egg whites, stiffly beaten
1     cup plus 6 tbsp. milk
1/4   cup melted butter
1/2   cup fine ground pecans
      salt to taste if desired

     Sift together the flour, salt and baking
powder.  Beat the whole eggs and gradually
beat in the milk and butter.  Add the flour
mixture and beat with a wire whisk until
smooth.  Add the pecans.  Beat until
thoroughly blended.  Fold in the egg whites.
You should have about 4 1/4 cups of batter.
Spoon onto your ready waffle iron and cook
according to the instructions of your iron.
Makes 4-14 depending on the size of the
waffle iron.
