Stuffed artichoke recipes

Stuffed artichokes
4 artichokes
3 cups soft bread crumbs
2 tbsp. snipped parsley
1 clove garlic, minced
1/4 tsp. pepper
8 anchovy fillets, cut up
1 cup olive oil
2 cups water
Cut stems from artichokes so they stand
up. Pull off hard outer leaves. Snip off spiny
tops of each leaf. With palm of hand, press
down on top of each artichoke. Then spread
the artichoke apart and make well in center.
In medium bowl, toss crumbs with parsley,
garlic, pepper and anchovies. Into well in
center of each artichoke spoon bread stuffing.
Pour oil and water into kettle. Add artichokes.
Simmer covered 20 minutes, then simmer
uncovered 35 minutes or until tender. Spoon
some of the oil and water from kettle over
artichokes.
