Waffles Recipes

French waffle slices
6     slices white bread
3     eggs
1/2   tsp. salt
1     tbsp. sugar
1     tsp. cinnamon
1/4   cup milk
1/4   cup butter, melted
      powdered sugar

     Beat eggs lightly.  Stir in salt, sugar,
cinnamon and milk.  Dip bread slices, one at
a time, into the egg batter and place slices
in your ready waffle iron.  Bake until light
goes off.  Brush with melted butter and
sprinkle with powdered sugar.  Serve with
syrup.

Chocolate waffles

2    cups sifted flour
2    tbsp. sugar
1    tbsp. cocoa
1    tbsp. baking powder
1    tsp. vanilla
1    tsp. salt
2    eggs, separated
1-1/2 cups milk
6    tbsp. melted butter
1    cup heavy cream

     Sift together flour, sugar, cocoa, baking
powder and salt into large bowl and set aside.
In medium bowl, beat egg yolks until light.
Add milk, melted butter and vanilla and beat
until well mixed.  Add to flour mixture,
beating only until moistened.  In small bowl,
beat egg whites until stiff peaks form.  Fold
into batter.  In chilled bowl, beat cream until
stiff peaks form and fold into batter just until
color is uniform.  Preapare and grease your
waffle iron according to directions.  Pour
batter to within 1 inch of the edge and bake 4-5
minutes or until steam no longer rises from
edge of hot iron.

Cornmeal waffles

1     cup cornmeal
1 1/2 cups boiling water
1/4   cup shortening
2     eggs, separated
1     cup flour
1/2   tsp. baking soda
2     tsp. baking powder
1/2   cup regular milk
1     cup buttermilk

     Put the cornmeal in a saucepan and pour
the boiling water over it.  Stir in the salt and
shortening.  Set the saucepan in a basin of
simmering water and cover.  Let cook,
stirring occasionally about 10 minutes.
Remove from the heat.  Beat the egg yolks
and add them to the cornmeal mixture
stirring.  Sift together the flour, baking soda,
baking powder.  Blend the regular milk with
the buttermilk and alternately add this and
the flour mixture to the cornmeal mixture.
Beat the egg whites until stiff and fold them
into the batter.  Cook on your waffle iron
according to iron instructions.  Serve with
syrup.

French waffles

1 3/4  cups milk, divided
1/4    cup melted butter
1      cup heavy cream
1 1/2  cups flour
6      eggs, lightly beaten
       salt to taste

     Heat 1 cup of milk in saucepan and add
the salt and butter.  Bring to a simmer and
remove from heat.  Immediately add the flour
and beat with a wire whisk.  Return the
mixture to the heat, stirring constantly, until
mixture comes away from the sides of the
pan.  Pour the mixture into a bowl, use mixer
and start beating on low speed.  Add 2 eggs at
a time, beating well after each addition.  Beat
in the remaining milk and the cream.  This
will be a thin, lumpy batter.  Pour the batter
onto the iron and cook according to the
directions of the waffle iron.

Ginger waffles

1 1/2  cups bisquick baking mix
1      tbsp. oil
1      egg
1      cup milk
2      tsp. ginger

     Beat all ingredients with a wire whisk
or hand beater until smooth.  Cook on iron
according to manufacturers instructions.
Makes 2 - 9 inch waffles.
