Lemon cheese pie

1    3 oz. pkg. lemon flavored gelatin
1    cup boiling water
3    tbsp. lemon juice
1    8 oz. pkg. cream cheese, softened
1    cup sugar
1    tsp. vanilla
1    13 oz. can evaporated milk, chilled
2    9 inch graham cracker crusts

     Dissolve gelatin in boiling water, stir in
lemon juice and set aside to cool.  Combine
cream cheese, sugar and vanilla and cream
until light and fluffy.  Add cooled gelatin
mixture and mix until smooth.  Beat milk
in a large chilled mixing bowl until stiff
peaks form.  Stir into cheese mixture and
blend well.  Spoon into the graham crusts
and chill at least 3 hours.
