Coconut chicken

1/4  cup lard or butter
6    small chicken breasts, boned and cubed
1    10 oz. pkg. frozen spinach
1/2  cup coconut milk
1    clove garlic, minced
1/2  cup macadamia nuts, chopped
     salt and pepper

     Heat lard and stir fry chicken until white.
cook spinach withh coconut milk and garlic.
Add to chicken.  Season with salt and pepper
to taste and garnish with macadamia nuts.
Serves 6.
