Banana chocolate cake recipes

Banana chocolate cake

1/2   cup plus 3 tablespoons matzo
      cake flour, sifted
6     tbsp. sifted potato starch
1/2   tsp. salt
1/2   cup walmuts, chopped fine
1/4   cup chopped raisins
1/2   cup chopped dates
6     eggs, separated
1     scant cup sugar
6     oz. melted semi-sweet chocolate
2     medium ripe bananas, peeled and mashed

      Mix cake meal, potato starch and salt.  Add
1/4 cup mixture to the nuts, raisins and dates.
Mix well.  Beat egg yolks with sugar until light
and thick.  Stir in melted, cooled chocolate and
mashed bananas.  Fold fruit and rest of dry
ingredients into batter.  Beat egg whites until
they hold a firm peak, fold into batter.  Grease
a 10 inch springform pan and line it with
waxed paper and then grease the paper.  Pour
batter into prepared pan and bake in 325
degree oven for 1 hour or until cake springs
back when touched.  Invert pan on a rack,
remove cake from pan, peel off paper and
invert again on another rack to cool.  Frost
with a boiled icing.
