Cashew Nut Crunch Recipes

It's a kind of drop cookies.This is the easiest way of making cookies by using two spoons to drop the soft dough onto the prepared tray.Press the dough with a wet fork if it is a little too stiff. Leave space between dough to allow for spreading.

 

Ingredients

(A) 150g butter, 80g brown sugar, 130g sugar, 1/8 tsp salt

(B) 1 egg

(C) 140g flour, 1/2 tsp baking powder, 1/4 tsp baking soda

(D) 30g rolled oats, blend till fine, 70g chopped cashew nuts, 50g chocolate chips, 50g white chocolate,coarsely chopped

Directions

1.Beat (A) in the mixer till light and fluffy, add in (B) and cream till smooth.

2.Add in sieved (C) and mix till well blended. Then add in (D) and mix till well incorporated.

3.Using a tablespoon, drop a big heap spoon of the dough into the prepared tray. Flatten it slightly using the spoon. Leave 3cm apart between each dough.

4.Bake at 170 degree for 20 minutes.

Tips

The cookies appear to be soft when baked but it will become firm and curnchy when cool.
