Jam Sandwich Cookies Recipes

It's kind of mould-cut cookies. A firmer dough is rooled between two plastic warps into a thin dough.Then cut it with cookie cutters into the desired shape (the dough sometimes needs to be refrigerated).After baked and cooled, it can be decorated with glaze or royal icing which can be tinted with desired food colouring.

 

Ingredients

(A) 125g butter, 125g sugar, pinch of salt, 1/4 tsp vanilla essence

(B) 1/2 egg, 1 egg yolk

(C) 250g flour, 20g custard powder, 1/2 tbsp milk powder

(D) some strawberry jam

Directions

1.Cream (A) till light then add in (B) nd cream till smooth.

2.Add in sieved (C) and mix till well blended.

3.Roll the dough between 2 sheets of plastic to a 3mm thickness. Then cut it with 5cm round cutter.

4.Use a 1.5cm small round cutter, cut one hole in half the cookies. Place cookies into the greased pan.

5.Bake at 180 degree for 15~20 minutes or till golden brown.

6.Let it cool. Spread strawberry jam onto cookies without holes. Top with holed cookies.

Tips

You may leave the top cookies intact or replace strawberry jam with jam of other flavours, cream or melted chocolate.
