Mama Carrie Recipes

It's kind of mould-cut cookies. A firmer dough is rooled between two plastic warps into a thin dough.Then cut it with cookie cutters into the desired shape (the dough sometimes needs to be refrigerated).After baked and cooled, it can be decorated with glaze or royal icing which can be tinted with desired food colouring.

Ingredients

(A) 200g butter, 110g icing sugar, pinch of salt

(B) 1 egg

(C) 300g flour, 1 tbsp milk powder, 1/2 tsp baking powder

Icing topping:

1 Egg white, 180g icing sugar

(D) some chocolate

Directions

1.Cream (A) lightly then add in (B) and cream till smooth.

2.Add in the sieved (C) and mix till well blended and became dough.

3.Refrigerate for 60 minutes or till firm.

4.Roll out the dough in between sheets of plastic to a 5mm thickness.

5.Cut it with 5cm round cutter and place it into the baking paper.

6.Bake at 170 degree for 20 minutes or till golden brown.

Icing Topping:

1.Mix all the ingredients till well combined to flowing consistency.

2.Let it cool and then pipe the topping on top.Dribble some melted chocolate on cookies.Using a cocktail stick of make marble pattern. Let it stand for 30 minutes.

3.Put it into an oven and bake at 150 degree for 10 minutes.(Refer to method for shaping Mama Carrie)

Tips

When the cookies coated with icing topping ar baked for too long or at too high temperature, the icing will puff up.
