Mixed Fruit and Nut Bars Recipes

It's kind of Bar Cookies. The texture is moister than cookies and denser than cakes. Cookies are baked in shallow pan, with or without sweet pastry. You can add chocolate bits,nuts,desiccated coconut,dried fruit,fresh fruit for even canned fruit. After baked and cooled completely, top with icing sugar or ganache and cut into square or rectangular,big or small pieces.

 

Ingredients

Sweet Pastry:

(A) 100g butter, 50g icing sugar

(B) 160g flour, 10g milk powder

Filling:

(A) 4 egs, 130g sugar, 110g milk, 60g melted butter

(B) 70g sultanas, 50g red glace cherries, 50g green glace cherries, 50g mixed peels, 50g desiccated coconuts, 60g flour,150g chopped roasted cashew nuts

Directions

Sweet Pastry:

1.Mix (A) till well blended.

2.Add in (B) and mix till well incorporated. Press it into a greased 31cm X 22cm X 2.5cm rectangluar pan.

3.Prick it with a fork. Bake at 180 degree for 15 minutes.

Filling:

1.Mix (A) till sugar dissolves. Then add in (B) and mix till well blended.

2.Pour it onto the baked sweet pastry. Place it at the bottom rack of the oven. Bake at 180 degree for 25 minutes.

3.Remove it from the pan, let it cool and cut it into pieces.

Tips

Cashew nuts can be substituted with other nuts or mixed nuts.
