Orange Coconut Bars Recipes

It's kind of Bar Cookies. The texture is moister than cookies and denser than cakes. Cookies are baked in shallow pan, with or without sweet pastry. You can add chocolate bits,nuts,desiccated coconut,dried fruit,fresh fruit for even canned fruit. After baked and cooled completely, top with icing sugar or ganache and cut into square or rectangular,big or small pieces.

 

Ingredients

Pastry:

(A) 70g icing sugar, 150g butter

(B) 1 egg

(C) 260g flour, 1tbsp milk powder

Filling:

(A) 140g butter, 100g sugar

(B) 2 eggs, 50g orange juice, 1/2 tsp orange zest

(C) 20g flour,40g rice flour, 30g ground almonds, 60g desiccated coconut

(D) 50g orange peel

(E) some orange marmalade

Directions

Pastry:

Mix (A) till well combined and add in (B). Cream till smooth. Lastly add in (C) and mix till well blended. Refrigerate for 1 hour to let it set. Then take out and rool between 2 plastic sheets to a 3mm thickness. Line it into the greased 25cm shallow square pan.

Filling:

1. Cream (A) till light then add in (B) and cream till smooth.

2.Add in the sieved (C) and mix till well blended. Then add in (D) and mix till well combined.

3.Mix the orange marmalade till soft and spread it into the pastry.

4.Then pour the filling onto it and level it.

5.Bake at 180 degree for 30 minutes, let it cool for 10 minutes. Remove it from the pan and cut it into rectangular pieces.

Tips

For pastry, do not cream (A) and (B) till light and fluffy as it will cause the pastry to break easily when baked.
