Apricot nectar salad

2    3 oz. pkgs. apricot gelatin
2    cups hot water
2    cups apricot nectar
1    med. can mandarin oranges, drained
1    cup crushed pineapple, drained
2    bananas, sliced
1/2  cup sugar
10   tbsp. pineapple juice
2    tbsp. lemon juice
1    tbsp. cornstarch (heaping)
1/2  cup whipped cream

     Prepare gelatin using hot water and apricot
nectar.  When cooled, add oranges, pineapple
and bananas and let set, in fridge.  When firm
make topping by heating the pineapple juice,
lemon juice, sugar and cornstarch.  Stir over
low heat until mixture is thickened.  Set aside
to cool.  When cool, fold in the whipped cream
and spread over set gelatin in fridge.  Cut in
squares to serve.
