Easy recipes for apple pie

A winner's apple pie

1    pkg. pie crust mix
1/2  cup sugar
3    tbsp. walnuts or pecans
1/2  tsp. grated lemon peel
1    egg yolk, beaten
3-3 1/2 cups thin sliced, peeled apples
3    tbsp. golden raisins
1/2  tsp. cinnamon
2    tsbp. lemon juice
1    tsp. water

     Prepare pie crust as directed on package
for a two crust pie.  Place 1 pie crust in the
baking pan and trim edges.  In large bowl,
combine apples, sugar, raisins, nuts, cinnamon,
lemon peel and lemon juice.  Spoon into pie
crust lined pan.  Cut the remaining pie crust
into strips to make a lattice crust top.
Arrange the strips in lattice design over apple
mixture.  Trim and seal edges.  In small bowl,
combine egg yolk and water and gently brush
over the crust topping.  Bake at 400 for 40-60
minutes or until golden brown and apples are
tender.  Cool for 1 hour then drizzle with glaze,
over the warm pie.

Glaze...mix 1/4 cup powdered sugar with 1/2
teaspoon lemon juice and spoon over warm pie.
