Snow capped apple rice Recipe

Snow capped apple rice

2    cups rice
1    cup milk
1    cup water
2    tbsp. butter
3    tbsp.sugar
1    lemon (juice and grated skin)
5    apples
3    tbsp. raisins
3    eggs
1    cup powdered sugar
     salt and cinnamon

     Cook rice with milk, water and salt.  Stir
butter with sugar until it is foamy.  Add egg
yolks, lemon juice and skin to sugar mixture
and stir again.  Peel apples and cut in slices.
Add sugar mixture, raisins and cinnamon to
your taste.  Mix rice and apple mixture
together well and put into a buttered casserole
or baking pan.
     Beat the whites of the eggs until they form
a peak and blend in the powdered sugar.
Cover top of apple mixture with egg whites
and bake in 325 degree oven for about 30
minutes.  Serve hot or cold.
