gelatin dessert recipe

gelatin dessert

1    tbsp. unflavored gelatin
1/2  cup cold pineapple juice
4    egg whites
1/4  tsp. salt
3/4  cup sugar
1/2  tsp. vanilla
2    tbsp. chopped maraschino cherries
1/4  cup crushed pineapple
1/3  cup blanced almonds
1/4  tsp. almond extract
     red and green food coloring as needed

     Soften gelatin in cold pinapple juice.
Dissolve over hot water.  Beat egg whites
until foamy, add salt and sugar gradually
and continue beating until soft peaks form.
Add dissolved gelatin to egg whites, beat
until thick, and of a marshmallow
consistency.  Add vanilla and almond extracts.
Divide into three parts.  Color 1 part pink
and add the maraschino cherries.  Color 1
part green and add pineapple and add
chopped almonds to remaining white.  Using
a 9 1/2x5x2 inch loaf pan, layer the mixtures
starting with the white layer on bottom,
then the green, then the pink.  Chill until set.
Cut in slices with whipped cream to serve.
Serves 8.
