Ambrosia rice pudding

Ambrosia rice pudding

1 20 oz. can pineapple chunks in juice
2 tsp. grated orange rind
1 banana, thinly sliced
1/2 cup pitted cherries
7 tbsp. flaked coconut
1 cup pre-cooked rice
2 naval oranges, peeled, sectioned
1/2 cup fresh blueberries
1/2 cup sliced strawberries
Drain pineapple juice into medium size
saucepan. Reserve chunks. Bring juice to
boiling, stir in rice. Remove from heat,
cover, let cool. Combine pineapple, orange
rind, orange sections, cherries, berries,
strawberries, bananas, coconut and rice and
blend well. Refrigerate several hours or
until well chilled.
