Mama's salad

2    3 oz. pkgs. lemon gelatin
2    cups boiling water
1/2  green pepper, chopped fine
1/2  apple, fine chopped with skins on
4    carrots, grated
1/2  cup fine chopped celery
1/2  cup fine chopped pecans
1    cup grated cheese

     Mix gelatin as directed using the 2 cups
boiling water.  When jello has dissolved set in
refrigerator to chill. When mixture is partially
thickened add remaining ingredients and pour
into a mold and chill until firm.  Slice onto
lettuce leaf when serving.
